Meet Jesse Seguin, Ruby Chef
I am one of the Head Chefs at the Ruby Restaurant at the Village of Wentworth Heights. I have been cooking for 10 years, and am a graduate of the Culinary Management program at Niagara College. What fuels my passion for cooking is my love of travelling and trying new and exciting things. Being able to experience different cultures and foods, while also having a career I am able to do anywhere in the world is what drove me to become a Chef.
Meet Regina Lyte, Ruby Chef
My Name is Regina and I am one of the Head Chefs at The Ruby. I have been with Schlegel Villages since 2002. I have worked in Nursing, Dietary as well as Cook for Retirement at Tansley Woods. I have been with The Ruby at Wentworth Heights since it opened.
You may wonder what has brought me to The Ruby and that’s simple, it’s the love of food and everything that comes with creating a new dish. I have always as young girl helped my mother in the kitchen. Which sparked the love for food, with that comes new flavors as well as a new way of plating that newly created dish. I believe that you eat first with your eyes then with all the other senses. So food has been something that I am very proud of in my home life and in my professional life.

“This is the only place on the Hamilton Mountain that has a view like this. I now take other friends here and they are surprised when they arrive at a retirement home to eat. I just laugh and tell them the best is yet to come. Wednesday is their fish and chip special. It's $8 for 1 piece and $14 for 2 pieces. It's a big piece of fish and the fries are delicious. Golden brown and crispy. Now that the Ruby has been open awhile, they are settled in and the food seems better to me than when they first opened. The servers are pleasant and at ease. They make you feel welcome.“
